B= they were used for drainage, this hypothesis is quite reasonable but it would run further around the town and not just at one part of it. And finally C= they are the town boundaries, this seems to be the most likely one seeing as the shape of them fit the grid shape of the town and the boundaries were not crossed as they didn't expand enough over them as for the Black Death.
